Eat in, Workout

I made Mexican matzo stacks for my families Seder! They disappeared, and no one knew they were vegan ;)

The matzo was baked with olive oil and garlic (5 mins at 350), then topped with homemade guacamole (avocado, lemon & garlic) and chopped tomato, cucumber, red onion, and coriander.
