Spring is here, so it’s the perfect time for a cleanse! I took making three days of juice at home, and it took me a solid few hours or shopping, cleaning, cutting, juicing, and cleaning some more. Worth it - it cost me HALF OF ONE DAY of a cleanse at my fav restaurant.

Yup, my first solo studio class is in the bag! Yay! Pat, my teacher, was a wonderful assistant. And my classmates had incredible things to say. Happy :)

SUPER EASY carrot soup

2 tsp olive oil
2 cups peel, chopped carrots 
4 cups of veggie broth 
1 can of chickpeas, rinsed 
1/2 tsp cumin
1/2 tsp thyme

Warm oil in a soup pot. Add carrots and coat thoroughly. Add in broth, chickpeas, and spices, bring to a rolling boil. Cook until carrots are tender (requires fork and taste test). Transfer to a food processor to blend. Sprinkle with salt and pepper and enjoy! Makes about 4 cups of soup.

Savory oats (cooked in water with nutritional yeast, garlic, turmeric, and chili power), fresh kale, edamame, and cherry tomatoes, and a dollop of vegan “tuna” (almonds, avocado, pickle juice, lemon, garlic, onion, mustard, salt and pepper).

Ugh. When breakfast is this beautiful, I can’t help but share.

Lunch: chick pea & sweet potato stew with bok choy, spinach, and a bed of quinoa. 

Snacks: mixed nuts (almond, pistachio, pecan, cashew) and homemade banana oatmeal dark chocolate chip vegan cookies.

My boyfriends birthday was all about getting active in the cold, and celebrating with vegan treats! We snowshoed, skated, had amazing vegan food and toasted with kombucha!
