Green juice and latkas for a balanced Hannukah of health and treats!
Juice: kale, celery, ginger, apple, lemon.
Latkas: potato, onion, flour, salt, pepper, egg, oil.
My new job is all about food. Lord help me.
Hannukah came early. My very own juicer!!!!
Got back in to my schedule of running today because Insanity is over (sadly). And all good runs include yoga breaks.
I love meal planning! For the next three days of school;
Breakfast: steel cut oats and fruit (not pictured)
Lunch: quinoa confetti salad (jars)
Snacks: energy bites (bags) and Jonagold apples
Dinner: my mom’s famous vegetable stir fry (Tupperware)
Taming my sweet tooth tonight with mixed fresh berries, dark chocolate drizzle, and a shot of whipped cream.
My two favorite foods at once? Stir fry and fresh pressed green juice are heaven.
At 57 years old, my mum is FINALLY in to oatmeal. This morning was the second in a row I prepared her some. She took maple syrup, brown sugar, and blueberries, while I went with blueberries, cashews, and a few dark chocolate chips.
Using up all the leftovers in the fridge was fun! Leftover quinoa/veggie salad (pictured earlier) with pepper, mushroom, onion, white bean, and mozzarella daiya quesadillas.
Halloween chocolate, meet oatmeal. Oatmeal, meet Halloween chocolate.
Since there’s still plenty of Halloween candy to be devoured, we’re eating healthy salads in between. This one had quinoa, onion, beet, artichoke, red pepper, spinach, avocado, chick peas, and feta.

I officially love putting food coloring in to my pancakes. And yes, that might just be the meltiest, saddest little whipped cream ghost ever…but I love him.
